The program\/project is implemented with the support of The Hellenic Initiative (THI). Founded in 2012, THI is a global non-profit organization that brings together Diaspora Greeks and Philhellenes to invest in Greece through programs focused on economic development and crisis relief. I only had some flour, which I took, grated a carrot I had, added whatever spices were available, rolled it up, and fried it. When they came back, I told them they were meatballs. While they were eating, my little daughter turned to me and said, \u2018Mum, it\u2019s very nice, but where\u2019s the minced meat?\u2019 I laughed and cried at the same time. “A bad day is when I have nothing to cook and I have to improvise so my child can eat something nice.
